  • We are a small but growing artisan bakery based in East Lothian, just 15 miles from Edinburgh
  • A range of organic bread, bakery products, pastries and cakes are baked daily
  • All products are hand crafted using traditional baking skills. Long fermentation processes of between 12 and 24 hours are used, ensuring full dough development with minimal yeast content
  • Recipes are developed in-house from scratch and we use no pre-mixes
  • All our cakes are made with fresh butter and fresh local eggs

  • ingredients are kept to  a mimium and there are no strange sounding chemicals in any of our products

  • we use no flour improvers, artificial sweeteners, colours, flavour enhancers, antioxidants,  hydrogenated fats, margarine, emulsifiers, stabilisers or preservatives

  • the list of ingredients in any of our products is short - 3 being the minimum, in our Pain au Levain which contains flour, water and salt - and absolutely nothing else

Dietary

  • our Rye Sourdough is wheat free

  • the Spelt, made from an ancient wheat flour is eaten by many customers who are wheat intolerant as it is a very pure flour and from a different genetic strain from modern wheats

  • the Pain au Levain and Rye Sourdough are yeast free
